Peanut Butter Pie!

Hi It’s Evelyn ,

I love peanut butter pie, also chocolate pie but that is  for another time. Here is a great tasting pie recipe I hope you like it.

1 package vanilla pudding mix (instant)

1 1/3 cups all-purpose flour

1/4 teaspoon salt

1/2 cup crisco cut in pieces

3 tablespoons cold water

 

1 1/2 cups of your favorite peanut butter

1/2 cup confectioners sugar

1/2 cuphalf and half

1 can sweetened condensed milk

3/4 cup milk 1 teaspoon vanilla

 

chocolate  or caramel topping  whatever you like that you can drizzle over pie

CRUST:

 

in mixer mix flour and salt add crisco, (best in mixer)

mix till size of small peas

while still mixing add water a little at a time just until dough holds together

make dough ball and chill 20 minutes

roll out to fit 9 inch pie pan

heat oven to 400 degrees

 

1ST LAYER:

mix together 3/4 cup peanut butter, powdered sugar, half and half  and vanilla, mix until well until  combined, pour into unbaked pie crust

bake 20 minutes or until crusts  is golden, cool completely

2ND LAYER:

while cooling, mix in bowl 1/2 cup peanut butter and sweetened milk ,mix well scraping bowl,add milk and pudding mix, when mixed pour over cooled peanut pie and spread evenly refrigerate at least 2 hours before serving drizzle with chocolate  or caramel.

Chicken Fried Steak

Hi ,It’s Evelyn,

Today I share my chicken fried steak recipe,great for cold winter nights .I serve mine with mashed potatoes and gravy and usually sweet corn.

4 beef cutlets

 

1 egg

1/2 cup milk

1 cup flour

1 teap. salt

1 teap. pepper

1/2 teap. celery seasoning

1/2 teap. garlic powder

crisco enough to almost cover steaks in pan

combine dry ingredients set aside

mix egg and milk

coat steaks in egg mixture then coat with flour mixture

heat skillet with crisco ,med high heat

place steaks in pan and cook till brown  then flip and fry till brown on other side

about 5 minutes a side

Gravy: 1/4 cup flour

2 cups milk

after steaks are done pour grease out all but enough to coat bottom of pan about 1/4 cup ,add flour to make a rue stirring constantly

when combined add milk stirring constantly, cook till thick  and serve over steaks

you can also use this recipe for pork chops, chicken and almost any meat you like

Grandma’s Got The Blues

Hi, It’s Evelyn,

From a earlier article I told about raising one of my 7 grandchildren.

It seems to me he has grown up and I did not notice ,I guess because I didn’t want him too. Too bad for me because he did it anyway .This child has his stuff together ! He is graduating high school 1 year early, already joined the national guard ,and already accepted into college with a full scholarship . I just blinked and this 17 year old man boy planned out his life .Still I am very proud of him and wish him nothing but the best as I do  all my grand kids .I just do not know what I’m going to do with myself without him to take care of , take a trip, get my nails done, sleep late, ect.

next time  I’ll share an old recipe for chicken fried steak  ,stay tuned while I finish feeling sorry for myself.

Old Fashion Macaroni Salad

Hello ,I’ts Evelyn
Today i share my macaroni salad recipe.
It is always asked for at family dinners, and of coarse always better in summer when you can get garden fresh tomatoes,.
1 package elbow or large shell macaroni whatever you like
1 cucumber diced
2 large tomatoes
5 radishes diced
4 green onions diced
3/4 cup mayo (miracle whip is best)
cook macaroni as directions say, rinse with cold water, drain,
add all other ingredients mix well and chill ,add more mayo if needed
serve cold and enjoy

Farmers Fried Cabbage

Hi’ I’ts Evelyn ,

Today is a veggie dish because we need our  veggies , A long time ago my grandma made me some  fried cabbage I was about 6 years old and I have loved it ever since . Start with 1/2 head of cabbage cut into chunky pieces, put 3 tablespoons butter in skillet melt then add cabbage , add 1/2 of an onion cut in chunks also , salt and pepper and  a little pinch of garlic powder and cook on med high heat turning every minute or two until cabbage is soft to your liking. only takes about 20 minutes from start to finish ,ENJOY! ps if you want a real treat add a little cream cheese after cooking mix well oh yum!

Granny’s Banana Bread

Hi’ it’s Evelyn,

Today is a recipe for a very moist and easy banana bread or you can make muffins with no changes to the recipe, depends on my mood wich one I make, anyway here it is:

1 cup sugar, 2 eggs beaten,1/2 cup softenend real butter,1/2 cup milk, 1teasp. baking soda, 1 teasp. cinnamon,2 or 3 ripe bananas mashed, 1/2 cup nuts any kind you like , I use black walnut or pecans YUM!

combine all ingredients mix well pour into 2 small or 1 larg bread pans greased , or muffin tins greased ,bake at 325 for 40 min. bread or 25 to 30 min muffins enjoy

 

oldies but goodies recipe -Noodles

Here is an old recipe for homemade noodles that a cafe close to my hometown used to make. I got the recipe when they were about to retire .I love this recipe and use it regulary at family dinners.
2 eggs(beaten)
2 1/2 egg shells cold water
1T. baking powder
pinch of salt
2 cups flour
1 or 2 drops yellow food coloring (just for color)
mix all together and roll out on floured wax paper thin as you can about1/4 to 1/8
inch thick. sprinkle with flour, roll dough into long tube cut to 1/2 inch strips and then unroll
let dry 1 hour cook in your fav broth chicken or beef ,about 6 cups .
it will thickin as it cooks usually about 15 minutes

Raising A Grandchild

Hi, it’s Evelyn, I have raised A grandchild since he was 2 months old .He is now 16 with his own truck ,his own friends and his own girfriend. Needless to say he has forgotten who I am except of course when he needs a $20 for gas or to bring him something to school he has forgotten. Yes I know that it is normal for him to have a life outside of life with me ,but I cannot help feeling sad . I am however very proud of the young man he has become. He treats others with respect and goes out of his way to be kind to all people. I am blessed to have raised such a great kid considering his life started out not the best. But more on that later. All in all I would not have traded our time together for anything , and I would  do it all over again. Until next time .!
